Banana Muffins

Ripe bananas lend natural sweetness and moisture, while a touch of vanilla enhances their warm, mellow flavor. The beauty of this recipe is its simplicity: just a handful of pantry staples come together in under 30 minutes, yet yield a batch of 10–12 moist muffins that disappear almost as quickly as they bake.

Ingredients:

  • 3 ripe bananas, mashed

  • 1/3 cup melted butter (or coconut oil)

  • 1/2 cup sugar (or honey/maple syrup for a natural version)

  • 1 egg, beaten

  • 1 tsp vanilla extract

  • 1 tsp baking soda

  • Pinch of salt

  • 1 1/2 cups all-purpose flour (or whole wheat for heartier texture)

    Optional Add-ins:

    • 1/2 cup chopped walnuts or pecans

    • 1/2 cup chocolate chips

    • Sprinkle of cinnamon

Instructions:

  1. Preheat oven to 350°F (175°C). Line or grease a muffin tin.

  2. In a mixing bowl, mash bananas. Stir in melted butter.

  4. Sprinkle baking soda and salt over the mixture, then stir in flour just until combined (don’t overmix).
