Harvest White Bean Chicken Chili

This cozy and colorful white bean chicken chili is packed with hearty vegetables, warm spices, and tender rotisserie chicken. It’s perfect for fall or anytime you want a nourishing, one-pot meal. Make it on the stovetop for a quick weeknight dinner or use the crockpot for a hands-off slow cook.

  • 2 cups chopped rotisserie chicken

  • 2 Tbsp olive oil

  • 1 medium onion, chopped

  • 2 medium carrots, chopped

  • 3 medium celery stalks, chopped

  • 1 bell pepper, chopped

  • 1 zucchini, chopped

  • 1 small jalapeño, finely chopped (optional)

  • 2 Tbsp minced garlic

  • 1 (15 oz) can white beans (Great Northern or Cannellini), drained

  • 1 cup frozen corn

  • 32 oz low-sodium beef broth

  • 1 tsp salt

  • 1 tsp black pepper

  • 1 Tbsp ground cumin

  • 1½ tsp chili powder

  • 1½ tsp dried oregano

  • ½ tsp paprika

Directions:

Step 1: Mise en Place (Get Everything in Its Place)

  • Measure olive oil into pot/skillet.

  • Chop rotisserie chicken into bite-sized pieces.

  • Dice onion, carrots, celery, and bell pepper; place in medium bowl.

  • Chop zucchini and measure corn; place in another medium bowl.

  • Mince jalapeño and place in small bowl.

  • In a small bowl, combine salt and black pepper.

  • In another small bowl, mix garlic, cumin, chili powder, oregano, and paprika.

  • Open and drain beans.

  • Open broth carton.

If Using Stovetop — Step 2: Get Cooking!

  1. Heat olive oil in large pot over medium-high heat.

  2. Add onion, carrots, celery, bell pepper, salt, and pepper. Cook 7–10 minutes, stirring occasionally.

  3. Add jalapeño and spice mixture; cook 1–2 minutes more.

  4. Add white beans and broth. Cover, bring to a boil, then reduce heat to medium-low. Simmer 25 minutes.

  5. Stir in chicken, zucchini, and corn. Simmer 10 more minutes.

  6. Serve warm. Top with shredded cheese if desired!

If Using Crockpot — Step 2: Get Cooking!

  1. Follow stovetop steps #1 & 2 using a skillet.

  2. Transfer sautéed ingredients to crockpot.

  3. Add zucchini, corn, white beans, and broth.

  4. Cover and cook:

    • LOW: 8 hours

    • HIGH: 4 hours

  5. Stir in chicken just before serving. Enjoy warm!
