Simple Beef Stew

Servings: 4–6

Cooking Time: 45 minutes (stovetop); 4-8 hours (crockpot)

Warm, hearty, and easy to prepare—includes stovetop and crockpot options! This simple stew is perfect served on its own or with crusty bread. Great for busy days and cozy nights alike!

Equipment:

Stovetop:

  • Large pot

  • Can opener

  • Measuring cups and spoons

  • Knife and cutting board

Crockpot:

  • 4-quart slow cooker

  • Skillet (optional)

  • Same tools as above

Ingredients

  • 1 lb beef stew meat, cut into bite-sized cubes

  • 1 Tbsp olive oil (for stovetop)

  • 32 oz frozen mixed vegetables (carrots, peas, corn, green beans, lima beans)

  • 32 oz low-sodium beef broth

  • 8 oz can Italian-style tomato sauce

  • ¼ tsp salt

  • Cooking spray (for crockpot)

Directions:

Stovetop

  1. Prep:
    Heat 1 Tbsp olive oil in a large pot over medium-high heat.
    Add beef and salt; brown for 5–6 minutes, stirring occasionally. Remove beef and set aside.

  2. Cook Veggies:
    In the same pot, add another splash of oil if needed. Sauté frozen veggies for 5–7 minutes until slightly tender.

  3. Simmer Stew:
    Return beef to the pot. Add broth and bring to a boil.
    Reduce heat to medium-low and simmer for 15 minutes.
    Stir in tomato sauce and simmer for another 15 minutes, until meat and veggies are fully tender.

Crockpot

  1. Prep:
    Spray the inside of your slow cooker with cooking spray.

  2. Combine:
    Add all ingredients to the crockpot and stir to combine.

  3. Cook:
    Cover and cook on LOW for 8 hours or HIGH for 4 hours, until beef and vegetables are tender and flavorful.
