Simple Beef Stew

Large pot

4-quart slow cooker

Ingredients
1 lb beef stew meat, cut into bite-sized cubes
1 Tbsp olive oil (for stovetop)
32 oz frozen mixed vegetables (carrots, peas, corn, green beans, lima beans)
32 oz low-sodium beef broth
8 oz can Italian-style tomato sauce
¼ tsp salt
Cooking spray (for crockpot)
Directions:
Stovetop
Prep:
Heat 1 Tbsp olive oil in a large pot over medium-high heat.
Add beef and salt; brown for 5–6 minutes, stirring occasionally. Remove beef and set aside.Cook Veggies:
In the same pot, add another splash of oil if needed. Sauté frozen veggies for 5–7 minutes until slightly tender.Simmer Stew:
Return beef to the pot. Add broth and bring to a boil.
Reduce heat to medium-low and simmer for 15 minutes.
Stir in tomato sauce and simmer for another 15 minutes, until meat and veggies are fully tender.
Crockpot
Prep:
Spray the inside of your slow cooker with cooking spray.Combine:
Add all ingredients to the crockpot and stir to combine.Cook:
Cover and cook on LOW for 8 hours or HIGH for 4 hours, until beef and vegetables are tender and flavorful.
