This classic egg salad is creamy, crunchy, and packed with protein — perfect for make-ahead breakfasts, quick lunches, or sandwiches on the go. Customize it with your favorite spices or extra veggies for variety.
Ingredients
6 hard-boiled eggs
6 Tbsp light mayonnaise
2 celery stalks, finely chopped
6 tsp mustard (yellow or Dijon)
Salt and black pepper, to taste
Directions:
Step 1: Mise en Place (Get Everything Ready)
Peel the hard-boiled eggs and place them in a medium bowl.
Finely chop the celery and set aside.
Measure the mayonnaise and mustard into the bowl with the eggs.
Step 2: Make the Egg Salad
Use a fork or masher to mash the eggs, mayonnaise, and mustard until mostly smooth.
Stir in the chopped celery and mix well.
Season with salt and pepper to taste.
