Apple Carrot Muffins

These Apple Carrot Muffins are a cozy and wholesome treat for fall! Made with fresh grated carrots, applesauce, and warm cinnamon, they’re soft, lightly sweet, and full of flavor. The recipe is gluten-free and vegan, using flax eggs and nut milk to keep everything moist and delicious — no dairy or eggs needed.

They make a great snack or breakfast on a cool morning, and your kitchen will smell amazing while they bake. Enjoy them with a cup of tea or warm apple cider for the perfect seasonal treat.


Base Ingredients:

  • 2 Tbsp flaxseed meal (to make flax egg)

  • 2 Tbsp water (to make flax egg)

  • 1/4 cup olive oil

  • 1/3 cup mashed very ripe banana

  • 1/4 cup maple syrup or honey

  • 1/2 cup unsweetened applesauce

  • 1/2 cup brown sugar

  • 1/2 tsp sea salt

  • 1 ½ tsp baking soda

  • 1/2 tsp ground cinnamon

  • 1/2 cup nut milk (almond, oat)

  • 1 cup grated carrot

  • 2/3 cup gluten-free rolled oats

  • 1 cup gluten free flour blend

Instructions:

Step 1: Make the Flax Eggs

  • In a large mixing bowl, add flaxseed meal and water.

  • Stir them together.

  • Let the mixture sit for a few minutes until it thickens.

Step 2: Preheat the Oven

  • Turn your oven on to 375°F

  • Let it heat up while you prepare the batter.

Step 3: Prepare the Muffin Pan

  • Place paper liners in each muffin cup.

  • OR lightly grease the muffin cups with oil or butter so nothing sticks.

Step 4: Mix the Wet Ingredients

  • To your flax egg bowl, add:

    • Mashed banana

    • Agave or maple syrup

    • Olive oil

  • Use a whisk or spoon to mix until smooth.

Step 5: Add More Flavor

  • Add these ingredients next:

    • Applesauce

    • Brown sugar

    • Baking soda

    • Salt

    • Cinnamon

  • Whisk everything together again.

Step 6: Add the Milk

  • Pour in the nut milk

  • Stir gently until mixed.

Step 7: Add the Carrots

  • Add the grated carrot last.

  • Stir with a spoon or spatula until it looks evenly mixed.

Step 8: Bake the Muffins

  • Spoon the batter evenly into each muffin cup.

  • Place the muffin pan in the oven.

  • Bake for 30–35 minutes, or until the tops are golden brown and a toothpick comes out clean.

  • Carefully remove from the oven and let them cool before eating.
