Taco Bowl

This Taco Bowl is a fresh, customizable meal that’s full of flavor and easy to make vegan! Start with a base of rice, quinoa, or greens, then layer on seasoned beans or plant-based protein, colorful veggies, and your favorite toppings like avocado, salsa, and dairy-free cheese. It’s perfect for meal prep, quick lunches, or dinner nights when you want something nourishing, satisfying, and totally delicious—no tortilla needed!
Ingredients
½ pound of thawed ground turkey or beef (replace with tofu to make it vegan/vegetarian)
1 Tablespoon olive oil
½ package taco seasoning mix
⅓ cup water
1 can fat-free refried beans (freeze and label the remaining for next time)
1 microwavable cup of brown rice (or replace with cooked quinoa or fresh greens as your base)
1 cup Shredded lettuce
1 cup Salsa
Other optional toppings:
Light sour cream
Shredded cheese (or vegan cheese)
Guacamole
Other toppings of choice!
Directions:
Mise en Place (get everything in its place)
Open all packages.
Heat skillet over medium heat.
Measure 1 Tablespoon oil into the skillet.
2. Get Cooking!
When the skillet is hot, add the ground turkey, beef or tofu. Stir and break up pieces until brown, about 6-7 minutes. (Wash hands after handling raw meat!)
After all the meat (or tofu) is brown, add the taco seasoning package mixed with ⅓ cup water and heat until it boils.
Once boiling, reduce the heat to low and allow it to simmer uncovered for 3-4 minutes. Continue to stir until it is thickened.
Heat ½ cup refried beans in the microwave for 30 seconds.
Microwave 1 cup of brown rice for 60 secs. Then measure out ½ cup.
When meat (or tofu), beans, and brown rice are finished cooking, arrange in a large bowl.
Add 1 cup shredded lettuce, ½ cup salsa, jalapeno slices, and other toppings of your choice.
