Trail Mix Bars

These chewy, wholesome trail mix bars are made with oats, almond butter, cranberries, and a touch of maple syrup—perfect for a quick breakfast, healthy snack, or grab-and-go fuel. Packed with fiber, plant-based protein, and natural sweetness, they’re both nourishing and delicious. Perfect for an afternoon snack or to take with you on the trail!

Ingredients:

  • 3 Tbsp flax meal + 6 Tbsp warm water (vegan “egg”)

  • 1 ¾ cups rolled oats*

  • 1 cup chickpea (garbanzo bean) flour

  • 1 cup dried cranberries (or raisins/cherries)

  • ⅓ cup chopped walnuts

  • 2 tsp cinnamon

  • ¼ tsp sea salt (omit if using salted nut butter)

  • ½ cup almond butter (or peanut butter)

  • ½ cup pure maple syrup

    Note- Use certified gluten-free oats and walnuts if needed.

Instructions:

  1. Preheat oven to 350°F (175°C). Grease or line an 11x7-inch baking dish (slightly smaller works too).

  2. Make flax “egg”: Stir flax meal with warm water in a small bowl and set aside to gel (about 5 minutes).

  3. Combine dry ingredients: In a large bowl, mix oats, chickpea flour, cranberries, walnuts, cinnamon, and sea salt.

  4. Mix wet ingredients: In another bowl, whisk almond butter and maple syrup. Add the gelled flax mixture and stir until smooth.

  5. Combine & bake: Pour wet ingredients into the dry and mix until well combined. Spread evenly into the prepared baking dish.

  6. Bake for 12-15 minutes, until the top is golden brown. Remove from oven, let cool completely, then cut into 10–12 bars.
